I absolutely love this gluten-free recipe! It is great for a dinner meal paired with chicken or steak. You can also cook it in advance and heat it up for your lunch the next day. I really like the fact that it is a lot lighter and does not have a lot of heavy carbs that will make you sleepy during the day. If you are dairy-free you could also try making it with an almond or soy cheese on the top. “Daiya” makes a great dairy-free cheese that melts and tastes a lot like real cheese. Yum!
☝Grilled Parmesan and Basil Zucchini Coins Recipe☝
( total time: 15 minutes. Serves 6)
Helpful hint: Tossing squash with dressing while it’s still warm helps the savory sauce to completely soak in.
3 medium zucchini, sliced 1/4 inches thick
1/4 cup Italian dressing
one clove garlic,minced
one lemon, zested and juiced
2 tablespoons shredded parmesan
2 tablespoons pine nuts, toasted
2 tablespoons minced basil
Heat grill to medium-high for direct cooking. Coat zucchini with cooking spray; grill 5 minutes, turning once.
In a bowl, mix dressing, garlic, 2 teaspoons lemon of lemon juice and 1 teaspoon zest; drizzle over zucchini. Top with cheese, nuts and basil.
